Ingredients

  • 2 oz 60 ml white rum
  • 1 oz 30 ml dark rum (optional float)
  • 3 oz 90 ml pineapple juice
  • 2 oz 60 ml coconut cream (or full-fat coconut milk + simple syrup)
  • 1 cup 120 g crushed ice
  • 1/2 cup 75 g fresh pineapple chunks (optional)
  • 1/2 oz 15 ml lime juice (optional)
  • Pineapple wedge and toasted coconut for garnish

Instructions

  • Chill a glass in the freezer for a few minutes to keep the drink cold.
  • Add crushed ice to a blender or cocktail shaker.
  • Pour 2 oz white rum into the blender or shaker.
  • Add 3 oz pineapple juice and 2 oz coconut cream.
  • Add 1/2 cup fresh pineapple chunks if using for extra body.
  • Add 1/2 oz lime juice if you want a brighter edge to the sweetness.
  • Secure the blender lid and blend on high until smooth and frothy (10–20 seconds) or shake vigorously for 20–30 seconds if using a shaker.
  • Rim the chilled glass with pineapple juice and dip into toasted shredded coconut for garnish.
  • Pour the blended mixture into the glass; strain if you prefer a smoother texture.
  • Float 1 oz dark rum on top by pouring slowly over the back of a spoon, garnish with a pineapple wedge, and serve immediately.
